The Matfer Bourgeat Exopan Steel Madeleine Sheet is a high-performance mold sheet designed to create traditional shell-shaped French mini madeleine cakes. Manufactured in France, this madeleine mold is made of Matfer’s Exopan material, a fine steel with a nonstick coated interior and a protective enameled exterior, that are PFOA free. Exopan combines the quality of cooking in tinplate with the benefits of a nonstick surface, contributing to overall development of product color during baking. Its nonstick surface eliminates greasing resulting in a clean release during depanning. The protective enamel ensures durability that will withstand heavy use in professional kitchens. Freezer and oven safe, Exopan molds have a resistance to temperatures ranging from -4F to 482F. Please note: Do not expose this pan to humid conditions
